French Onion Chicken
But for now, let’s talk about how amazing it is over some seared chicken breasts and topped with a big, old handful of shredded Swiss cheese melted right over the top. I’m actually currently drooling just thinking about how delicious it was. And now I need to go make it again asap! It does take a little more time to put together than most of my super simple recipes, but trust me when I say that it’s time well spent! The trick is really letting the onions slowly cook down so that they literally get to the point where they are just melt in your mouth tender. And as if they didn’t taste delicious enough on their own, the addition of just a small amount of balsamic vinegar literally elevates the flavors in this dish soooooo much!
There is also a small amount of flour that I used to thicken up the onion mixture a bit, but if you’re gluten intolerant, feel free to sub a gluten free flour or omit entirely if desired! If you omit it, the sauce will be a bit more liquidy, but the taste will still be AWESOME!
