Lobster Mac and Cheese

LOBSTER MAC AND CHEESE
INGREDIENTS
- 1 pound elbow pasta (or any short cut pasta)
- 9 tablespoons butter, divided
- 1 clove garlic, minced
- 1 pound cooked lobster meat, chopped
- 1 tablespoon fresh parsley, plus more for garnish
- 1 1/2 cups crushed Ritz crackers (about 1 sleeve)
- 1/4 cup flour
- 3 cups whole milk
- 1 1/4 cups sharp white cheddar cheese, shredded
- 1 1/4 cups gruyere cheese, shredded
- 1 cup fontina cheese, shredded
- 4 ounces brie, rind removed and chopped
- 1/4 teaspoon mustard powder
- 1/4 teaspoon cayenne powder
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
