Peanut Butter No-Bake Cookies


Loaded with sweet-salty peanut butter and chewy oats, these cookies are perfect for when you’re craving dessert but don’t have the time or patience to wait for your oven to preheat. The texture is a bit more fudgy than your average cookie, and WE'RE OBSESSED. 
The process is pretty much foolproof, but be sure to follow these tips to really nail it.
We highly recommend insist upon using a smooth peanut butter, like Skippy or Jif. Even though we choose natural peanut butter for our PB&Js, for this recipe, the natural stuff is too runny and inconsistent. It throws off the texture, which makes them fussy and hard to set.
Even though peanut butter already has salt in it, it's not quite enough to balance out the sugar here. Plus, we firmly believe that salt in any dessert = a must. Here, we use ½ teaspoon of kosher salt. It takes these cookies to the next level.
Do not use quick-cooking or steel cut! Regular, old-fashioned oats are the way to go. It's what makes them chewy, and cookie-like. Because this recipe doesn’t have flour, it may sound like it's naturally gluten free. To be extra-sure, choose oats specifically marked “gluten free.” 
It sounds weird, but it's necessary. Boiling the sugar mixture will make sure that cookies set up properly and don't separate—kind like fudge! BUT if you boil them for too longer (over a minute), you risk overcooking the mixture and ending up with crumbly cookies. 
Believe it or not, they set up at room temperature! And they can be stored at room temperature too for 3 to 4 days. If you want them to keep for longer, you can keep them in the fridge or freezer. They're kind of amazing when eaten cold.

  • 1 c. granulated sugar
  • 3/4 c. packed brown sugar
  • 1/2 c. (1 stick) butter, cut into cubes
  • 1/2 c. milk
  • 1 c. smooth peanut butter
  • 2 tsp. pure vanilla extract
  • 1/2 tsp. kosher salt
  • 2 1/2 c. old-fashioned oats
